SHORTCRUST PASTRY DOUGH

Let’s discover the secrets of a perfect salted and sweet short pastry, its variations, different flours and the balance of ingredients. We will bake from scratch:

- Red onion, olives and anchovy savory pie with a spelt pastry crust
- Ricotta cheese and bluberries tart
- Grandma’s egg custard pie with pine nuts
- Red Wine poached pear and chocolate tart
- Flower shaped mini tarts with jam, custard, fresh fruit or chocolate

ALL ABOUT "CANTUCCI"

Our crunchy, almond Biscotti (the word means “twice-baked”) are the best known of Italian cookies, typically served with Vinsanto wine. We will bake them from scratch, we’ll discover how to use them in delicious desserts and learn to prepare a savory version perfect for a great cheese and charcuterie board.

- Sweet almond “Cantucci” and Vinsanto wine flavoured egg custard
- Savory “Cantucci” with almonds, sundried tomatoes and capers
- Tuscan Tiramisù with “Cantucci”, mascarpone cheese and Vinsanto wine
- Red Wine poached pear (or seasonal honey glazed grilled peaches), ricotta cheese mousse and “Cantucci” crumble.

TRADITIONAL TUSCAN DESSERTS

A journey through taste and history of some of Tuscan traditional cakes and desserts.

- "Ciambelline al vino" ( Montecarlo red wine or Sovrano sparkling white wine crunchy mini-donuts cookies)
- Sweet almond "Cantucci" and Vinsanto wine flavoured egg custard
- "Torta co’ bischeri" (Pisan chocolate and rice tart with currant, pine nuts and candied fruit)
- "Zuccotto Buontalenti" (Ricotta cheese semifreddo, flavoured with Alchermes liqueur. Alchermes is a bright crimson liqueur with a lovely floral aroma, a real Renaissance spirit, the Tuscan elixir for long life, a favourite liqueur of the Medici family)
