This ancient wine is produced since 1970, when Fattoria del Teso was reorganized on the basis of the modern viticulture and special areas of the cellar were created (the “fruit cellar” for drying the grapes and the attic for the ageing in the “caratelli”). Nowadays the production goes on with the same techniques and tradition such as the drying of the grapes on straw mats and the soft pressing with the manual press. The oak and chestnut barrels (called “caratelli”) are the original ones used in 1970 and give unique aromas and ancient taste to this wine.
